These are ALWAYS in our house! There is usually also a batch in Jared’s office freezer too, they the go to treat in his life! These were the first recipe we used to begin to transition him away from refined sugar and white flour – you can read more about that journey HERE.
This week I had the privilege of doing two health classes and juicing demos with different groups of people, I love getting to do those! As it’s holiday season I thought that as well as making juices I’d take some healthy treats to give people ideas and alternatives to the refined sugar laden plates that adorn every corner of the world in this season. I used recipes that are staples in our house and ones that are easily modified for different taste buds. For the first class I made a chocolate chip oatmeal cookie with raisins and walnuts and for the second class I went totally grain free and just did chocolate chip, raisin and walnut. For both classes I also made raw chocolate energy balls filled with fruit, nuts and seeds (a bit like THESE). In time I’ll do a post on nutmilk making but for now here are the cookies, enjoy!
Chocolate chip oatmeal raisin cookies
1/2 cup honey
1/3 cup coconut oil
1 room temperature egg
1 tsp vanilla
1 cups almond/cashew meal
1 1/2 cups gf oats (if you use whole oats I like to pulse them a few times in the food processor to break them up a tiny bit)
1/4 tsp baking soda
1/4 (or more!!) cup clean chocolate chips (optional, but really, who’d leave them out?!)
1/4 cup raisins (optional)
1/4 cup walnuts (optional)
Beat the honey and softened oil well then add the vanilla and eggs, stir in the nut meal with the salt and baking soda until well combined and then mix in the oats. Finally add any additional bits and stir to distribute them through the cookie dough. Set the dough in the fridge and preheat the oven to 350F. After 30 mins remove the dough and spoon heaped tablespoons onto a cookie sheet. Bake for 12 mins or until the top is just turning golden brown then remove from the sheet to cool.
