I love these for a protein rich, treat-yourself breakfast that is totally guilt free and nutritious. They’re great for traveling too, I’m writing this post from a plane in the sky and I brought some with me that I polished off pre takeoff. A smoothie can’t come through security so there are great to make the night before, throw in a Tupperware and bring with me to give me a good travel breakfast when you have an early start. Occasionally they show up for dinner too after a heavy workout or just a heavy day 😉
1 scoop (1/4 cup) raw protein powder/or almond flour for a grain free, lower protein alternative (you can find this on amazon under the ‘store’ tab above)
1/2 ripe banana
1 tbsp freshly ground flax seed
1/2 tsp baking powder
1/4 tsp cinnamon
1/2-1 cup almond milk/water
Mash the banana well and add the flax seed and raw protein powder/almond flour mix in the almond milk until you have a pancake batter consistency. Leave for 10 mins for then heat up a skillet and beat in the baking powder when you are ready to make the pancakes. Spoon large tbsp amounts of batter into the pan and spread out the batter. They should make 2inch sized rounds. They cook very quickly on a medium heat so flip over after about 1 minute. Cook the other side then set on a plate. It will make about 5-6 pancakes.
I’m a chocolate fiend so that’s what I lather on mine but you can use anything, berries, banana and chopped nuts, nut butter….
3 tbsp unsweetened cocoa
1/3 cup almond milk
(Your choice of sweetener to taste)
Mix together well and pour over pancakes. I don’t like it sweet so the sweetness of the almond milk is enough but you could use 1/2 tbsp raw honey or maple syrup.
Now sit down and indulge or pack then up for the road. Bon appetite.
