You will need:
1/2 cup chia seeds
2 1/4 cups almond/coconut milk (DIY version HERE)
1/2 tsp vanilla powder
If you want to make you’re own nut milk you’ll also need to pick up a Nut Milk Bag – (They’re an inexpensive kitchen addition but so great for making all your own nut milks! THIS is the one we love.)
To serve: 4 mini bowls or 2 large ones
Toppings: We like bananas, berries, and other fresh fruit, chopped nuts, hemp seeds, coconut flakes, nut butter, honey, chocolate sauce… anything you can dream up really!
In short: That’s it! Mix them together well so that there are no clumps of seeds, cover, and set in the fridge overnight. I like to use a 50:50 almond and coconut milk for this one so that the coconut flavour really comes through, and I alter the DIY nut milk recipe so that it has 3 dates instead of 1 to give the final pudding a little more sweetness, but any milk will do.
The vanilla powder I like as it’s a raw recipe and I don’t want the usual alcohol (and often sugar) of a vanilla extract, plus I think the flavour of the ground bean powder is far richer and nicer than the extract, but you can use either.
