Chocolate Protein Pancakes: My Breastfeeding Go To!

The protein pancakes I started basically every day with after having Roey, with Clayton it was a protein waffle with Roey is was chocolate protein pancakes. When I’m newly breastfeeding and navigating a complete change in life rhythm, a solid big protein rich breakfast helps me not even think about food for a lot of hours which is invaluable!

I didn’t usually show you them on instagram cos it was dark as I was racing to get brekkie for everyone (and I was starving!) but when I posted on my stories and you all DM’d me for the recipe so I made them for lunch and here. ya. go. Also it took me an hour to make them and get a photo cos everyone cried at the same time but that’s how much I love you,for real ?

INGREDIENTS

1 small ripe banana or half a large one
1 egg
1 tbsp coconut flour
3T cacao
2T @yoursuperfoods skinny protein
1 tsp cinnamon
1 tsp baking powder
Almond milk to thin it to a batter consistency (about 1/3 cup but add gradually and add more/less)
1/3 cup berries or 1/2 tsp vanilla extract also makes a great addition

DIRECTIONS

Beat everything together and add nut milk slowly as needed. Heat a skillet to a medium heat (you know I love my @lodgecastiron) and brush with coconut oil then cook the pancakes (4-5) in circles carefully flipping half way. Top with whatever you want. I usually do more banana, or a I finely diced 1/2 apple ?. Then drizzle nut butter. I like added water to my nut butter Tibet a really creamy drizzle. If you do it, add almost drop by drop! At first it will seize up then with more water it will loosen and go to a yummy smooth drizzley consistency ❤️ Enjoy!

I usually do a serving of high quality protein powder each day when I’m pregnant/nursing to make sure I’m getting what I need – my pretended is simple organic plant (non soy) protein and I don’t love drinking smoothies so it’s either pancake or a thick smoothie bowl!
