Day 3 of Live Below the Line

Today’s meal plan from Kezia:
Breakfast – 2/3 cup oatmeal cooked in water with 1/2 banana
Lunch – 1 cup lentils with onion and tomato puree and 1/2 cup rice and 1/2 frozen banana with PB
Dinner – The same egg fried rice made with 1 cup brown rice, 1 shredded carrot, 1 egg and 2 tbsp soy sauce
I went into Day 3 feeling pretty carb-y and not particularly impressed, so I chose to have a little less than my allotted amount of oats. I mashed most of the banana in with the oatmeal to sweeten it; bananas are amazingly sweet! So breakfast was a success.
At lunch, I found a little tomato puree left over to go with my rice and lentils… which I managed to burn- very sad- so lunch was small. Today I am realising how black and white this issue of extreme poverty is. What I bought on Sundaynight is literally all the food for the week. If I burn my rice and can’t eat it, I can’t remake it, because that’s all there was. More than being hungry or carbed-out, its the consequences of having such limited means that are standing out to me on this challenge.
After my third egg-fried rice meal this week, I think it will be a while before I venture anywhere near it again! But I am really looking forward to those banana pancakes in the morning…
