This is a uber simplified, deconstructed California omelette (ok not really, it’s just eggs, avo and salsa!) and it makes for an easy quick delicious breakfast. Either the night before or when I get up I throw eggs the eggs in the oven set it for 20 mins at 350F. Jump in the shower, apply make up, come back and you have a baked egg. Run it under cold water, peel, slice, throw on a plate with avocado and salsa and it’s perfect for a two minute nutritious breakfast. For the ultra quick option keep your avocado prepped and sliced and bake a few days worth of eggs at once and peel ahead of time. Bingo, you kept the mornings simple and can still eat a good breakfast.
