Super Clean Chocolate Banana Loaf

Ingredients

  • 4 bananas ripe
  • 3 eggs
  • 1 cup ground oats (oat flour)
  • ¾ cup cocoa powder
  • 1 ½ tsp baking powder
  • pinch pink salt
  • ½ tsp vanilla extract
  • ½ cup whole oats
  • ¼ cup pumpkin seeds
  • ¼ cup raisins or chopped dates
  • ¼ cup nut milk

Instructions

  • Throw 3 of the bananas along with the eggs, cocoa, oat flour, vanilla, nut milk, salt and baking powder in a food processor and blend it till it’s all nicely smooth. 
  • Then just stir in the whole oats, slice the last banana and stir that in along with the pumpkin seeds and raisins. It’s that easy!
  • Pour it all into a lined loaf tin and bake at 350F for about 35-40 minutes or until it’s just springy to the touch and not ‘wobbly’!
  • Let it cool (or don’t, you know, do you really think I did?!) then spread it with nut butter, add banana slices, sprinkle on cacao nibs and enjoy!
